Chipotle Pulled Pork and Waffle Appetizer

Ingredients:

For the Waffle Topping

  • 2 cups Chipotle Pulled Pork, thawed if frozen

For the Chipotle Sauce:

  • 1 ½ cup mayonnaise
  • ½ cup sour cream
  • 3-4 chipotles in adobo sauce (more or less, depending on your personal taste)
  • 2-3 tablespoon adobo sauce
  • 2 limes, juiced
  • Salt and freshly ground black pepper
  • Red pepper slices for garnish
  • Black olive slices for garnish

Assembly:

  • 30 mini Le Waf waffles*

How to bake Le Waf Waffles?*

  • Step 1: It's simple, really: Use Le Waf Dry Mix and add water! Reserve half of the pearl sugar to minimize sweetness of the dish as an appetizer.
  • Step 2: Mix & divide to your desired size and let proof at room temperature until size doubles.
  • Step 3: Pre-heat your waffle iron to 180 Celsius/350 Fahrenheit and bake waffles for 3 to 4  minutes until golden brown.
  • Step 4: Prepare the finished dish by drizzling the chipotle sauce on your waffles and topping with pulled pork and other ingredients for garnish.

For the Chipotle Sauce:

  • Add the mayonnaise, sour cream, chipotles, adobo sauce and lime juice to a food processor and puree. Season to taste with salt and pepper.

To assemble the appetizers:

  • Spread half a teaspoon of chipotle sauce on the cooled mini Le Waf waffles. Add a tablespoon of chipotle pulled pork and garnish with slices of red pepper and olives.
